Wine newbies and connoisseurs alike come together at Aaria Bar & Lounge every Saturday night for Acqualina's wine tasting series. Experience wine, food and music from around the world, as our experts lead you through every sampling. Each month will focus on a specific region of the world, highlighting that locale's oenological offerings, as well as featuring complimentary regional canapés and live music.   Wine tastings will be held every Saturday from 6 to 8 pm. This summer's geographic themes are:

May - Chile: South America's Emerging Wine Region
June - Australia: Experience Australia; It's Not Only About Shiraz
July - California: Celebrate America; Drink American Wine!
August - Japan: Sake and Sushi
$25 per person

Cooking Classes with Michele Mazza

  • Join Michele Mazza, Il Mulino's executive chef, for private cooking classes during select months this summer. Meet Michele in one of Acqualina's resort suites and learn new techniques, tips and recipes from our culinary pro.

    Classes begin at 7:00 pm. Maximum six people per class.   $375 per person, based on six people per class. Includes Deluxe One Bedroom Suite for the evening.

Kids Can Cook, Too

Children Cooking  Classes

At Acqualina, cooking isn't only for grown-ups. This summer, unleash the inner chef in your child with cooking classes at Il Mulino New York. Every Saturday from 3:00 pm to 4:00 pm, enrolled children ages 5 to 12 will cook pizzas with one of Il Mulino's chefs in the restaurant's private dining room. They'll even get their own authentic Il Mulino chef's hat! Contact the concierge for more details at 305.918.6860.

4th of July BBQ at Acqualina


Acqualina guests are invited to celebrate Independence Day with live music and a delicious BBQ.

Location: Recreation pool and Front Lawn

Date and time: Saturday, July 4th, 2009, 12:00 pm to 4:00 pm $45 for adults, $22.50 for kids 

Special AcquaMarine activities for the children will also be available for resort guests and residents. Kids will be able to play games, facepaint, watercolor or participate in a watermelon eating contest while adults can relax and enjoy cuisine from the specially designed American Classic menu from our chef, Marc Debas.



Miami Spice





This August and September, Il Mulino New York will participate in Miami Spice, offering a special prix fixe lunch menu for $23, and dinner for $36.

Recipe from Il Mulino New York:

Famous Fried Calamari

2 oz. calamari tentacles
4 oz. calamari tubes, cut in half
1 1/2 oz. zucchini, julienned
4 slices of lemon salt and pepper to taste flour, as needed
3 oz. Il Mulino marinara sauce
1 pinch red pepper flakes
1 pinch Italian parsley, chopped
1 lemon wrap


  1. Place calamari, zucchini and lemon in bowl. Season with salt and pepper.
  2. Add flour to bowl, and toss ingredients until completely coated. 
  3. Shake off excess flour and place calamari in a fry basket. Calamari takes approximately two minutes to cook. 
  4. When calamari is done, place on a paper towel to absorb excess oil. Season again with salt and pepper. 
  5. Stack calamari in a paper napkin, fold and place on an oval plate. 
  6. In a small glass bowl, pour heated Il Mulino marinara sauce and add a pinch of red pepper flakes. Garnish calamari with chopped parsley. 
  7. Place half a lemon wrap next to the sauce before serving.
