Holiday Spirit minus the Stress!

It’s the most wonderful time of the year, but let’s face it, the holidays can be stressful! To help ease you into the holiday spirit, I’ve included the recipe for my new found party favor, created a holiday gift guide, and listed ESPA’s latest age defying products and treatments. Happy Holidays!


Apps for Entertaining: In my search for a holiday appetizer, I realized that I don’t care for skewers, shrimp tails, shells or anything that is left in your hand after you have eaten it. You can never find a place to dispose of it and it doesn’t look good to have little trash bowls around. I have decided I like “one bites”. Something you can pop into your mouth and carry on…I like the Mini Brie Tarts… and who doesn’t like Brie? Sure to be a hit at any party.


  • 12 miniature tart shells, frozen 
  • 1 (200 g) packages brie cheese (remove the rind)
  • Red pepper jelly (Cranberry sauce is a good substitute)


  1. Bake shells according to package directions. Let cool.
  2. Divide cheese in 12 pieces of equal size. Place in cooked shells.
  3. Bake in a 350°F oven for 15 minutes until cheese is melted.
  4. Top each tart with 1 Tsp of red pepper jelly.
  5. Serve and enjoy

Nutritious & Delicious Thanksgiving Recipe

Every Thanksgiving I try to come up with something new and different to prepare.  This year I’m going to make a “Roasted Butternut Squash Salad" with a citrus vinaigrette.

The recipe is:

  • 1 (1 ½ -pound) butternut squash, peeled and ¾-inch diced,
  • virgin olive oil
  • 1 tablespoon pure maple sugar
  • kosher salt & fresh ground black pepper
  • 3 table spoons dried cranberries
  • 4 ounces of baby arugula
  • ½ cup walnuts halves toasted
  • ¾ cups shaved parmesan

Preheat oven 400 degrees F, add olive oil, syrup and salt & pepper, toss and place on a sheet pan.  Roast for 15-20 min until tender turning once, add cranberries the last 5 min.  While squash is roasting combine ½ cup olive oil, ¼ cup apple cider vinegar, squeeze fresh lemon (to taste) dash of sugar, salt & pepper whisk. Place arugula in bowl add the roasted squash mixture, walnuts, and shaved parmesan. Spoon just enough vinaigrette over the salad to moisten and toss. Sprinkle with salt & pepper serve immediately.

Kale Is The New Romaine

Kale is king!  This healthy superfood is gaining more recognition and popularity for a number of reasons and here’s why: Kale is high in fiber, low in calories and has zero fat! It’s packed with powerful antioxidants and is a great source of iron. It’s a terrific detox food packed with fiber and sulfur, both great for detoxifying your body and keeping your liver healthy. I like to use kale in a variety of ways, such as in a green smoothie or kale chips which make a great tasting snack. I say “Kale is the new romaine”, I came across a restaurant in Key Largo this past week that had a Kale Ceaser Salad on the menu that was delicious! Try it in place of your favorite lettuce and let me know what you think.

Here’s a great tasting kale smoothie recipe you can try at home:
Kale Coconut Green Smoothie
1 Banana
1 Orange
1 Medium Carrot
3 Cups of Kale (remove stems)
8 Oz Unsweetened Coconut Milk or Coconut Water

Pour the coconut milk into the blender followed by the chopped fruits and vegetables. Blend on high for 30 seconds

Avocado is one of the most precious natural ingredients for face masks with the ability to protect the skin from solar radiation. 

Recipe: (1) avocado (cut in half and remove the pit) scoop out the pulp from the peel. Mash the pulp into a paste. Gently rub the peel against clean skin for 3-5 minutes. Apply the mashed avocado to the face and neck leave on for 10 minutes. Rinse with warm water.

Here is a home remedy that can help you with both.  Coffee is great for reducing swelling and puffiness.  Coffee and cocoa are filled with antioxidants.
• 2tbsp freshly ground coffee
• 2tbsp cocoa powder
• 3tbsp milk (heavy cream, yogurt will work)
• 1tbsp honey
Mix together, apply to face 15-20 minute, rinse off.

3 Ways to restore your spirit over stress full times during the holiday season.

1. Go to the BEACH.  Just looking at the ocean can bring a sense of calm.  The smell of the sea, waves crashing and the amazing sea breeze, lessens the stress and allows you to forget the world around you.  The sound of the waves crashing can put you in a calmer and meditative state.  The minerals in the ocean’s water helps to relieve pain associated with arthritis, psoriasis and even depression.  So grab that book and enjoy a day at the beach.

2. Projects.  I can’t tell you the sense of accomplishment when I clean out my closet or reorganize my kitchen cabinets.  One of my favorite project’s to do is working in my garden. The feel of the earth in my hands planting my own organic food watching it grow brings a joy to my heart.  It can be very meditative and calming as you tend to put your energy into something good.  It can help you forget you troubles for at least that day.

3. Cooking. I love to cook. The process of choosing a recipe, going to the market, purchasing all the ingredients, wine, even music can be fun. I usually try a theme and combine it all together. Greek, Italian and Indian are my usual favorites I have even dabbled in Thai. Invite your friends and wow them with your culinary skills. It is amazing how cooking can take you and your mind to a far away place.

Spring is Here!

Spring is the time for rebirth and a great way to celebrate spring is by shedding the old and bringing in the new. 

Start the season with getting rid of dried dead skin. Start with this easy home salt scrub recipe for a healthy radiant glow. 

  • Combine a ½ cup of kosher salt and ¼ cup of table salt and mix well 
  • Add avocado or grapeseed oil, finely chopped fresh rosemary, and 5 drops of lavender oil and mix well 
  • Apply on a damp body, start at the feet work your way up in upward quick friction movements
  • Rinse and pat the body dry leaving the oil as a finishing product and your skin will glow.

The Winter season is passing and before we know it, Spring will be upon us. 

As we begin the annual spring cleaning, we encourage you to do the same for your body. During the winter, it is hard to keep a radiant and lively glow on the skin. However, Acqualina Spa by ESPA has a few tips to get you started.

  • start with a full body exfoliation in the shower using our Invigorating Body Reviver.

Acqualina Spa by ESPA prides itself in providing excellent service to every guest and it's done through our excellent and talented Therapists. 

The awards demonstrate the hard work of our Acqualina Spa by ESPA Therapists including the most recent Spas of America Top 100 Spas placing Acqualina Spa by ESPA at number 16. It isn't possible to achieve such feat without the amazing and talented Therapists.

So we've decided to dedicate the next few weeks to our Award-Winning Therapists starting with Ingrid Parra who has been at Acqualina for six wonderful years. 

What is your specialty? I pamper my guests and perform maternity treatment and facials. 

What do you love about working at Acqualina Spa by ESPA? The professionalism and luxury that the spa carries and it was what first attracted me to my career. 

What is your favorite ESPA Product? My favorite ESPA product is definitely the Refining Skin Polish. 

What are the benefits of this product? Some benefits of this product are that it leaves your skin refreshed, radiant and most importantly clean. 

What is your favorite hobby? I love to jog in the mornings with my daughter. It's a healthy and active activity and it's our time to bond and I cherish that time with her.

Keeping those Dark Circles Away

When stress and tension from work, family and well, life gets rough, some of us tend to deprive ourselves from sleep. 

Sleep is one of the most important aspects of our health. It not only helps our diet and performance but it also helps our appearance and most importantly, our wellbeing. Kick-Starting the New Year with an

The New Year chimes a fresh start, new hopes and dreams and at times, brings back the old infamous resolutions. 

Resolutions or not, our Acqualina Spa by ESPA has a few tips to get you started on your 2013 health kick with ESPA's Detoxifying Bath Oil and Smooth & Firm Body Butter. 

Draw a bath and add 3 cap full of the ESPA Detoxifying Bath Oil. While the tub is filling, use the body brush on a dry area and stroke from the ankle to the knee.Then, from knee to the thigh followed by a hand stroke always working up bringing the blood flow to the heart. This will help exfoliate dry skin and stimulate your lymphatic system to help flush out toxins and increase circulation.You can continue to use the brush on areas like dry elbows and heels in a circular motion to leave the skin smooth. Then soak in the tub for 20 minutes and rinse off with a cool shower after you dry off apply the ESPA Smooth & Firm Body Butter to the areas of concern such as the legs, thighs, derriere and abdomen. This intensely rich formula will help to tone and refine those specific areas and help get you on your way to great succes in 2013!
