If you\u2019ve ever enjoyed classic Italian dishes in the upscale atmosphere at Il Mulino New York<\/a><\/strong>, you can thank Chef Michele Mazza for an incredible meal.<\/p>\n

The Torre del Greco-born chef went to culinary school near his hometown in Southern Italy before moving to the US and has since spent over a decade as the corporate executive chef of Il Mulino New York<\/strong>, a beloved Italian restaurant with more than a dozen locations across the country.<\/p>\n

Since he oversees all of the group\u2019s restaurants, Chef Mazza regularly travels all across the country from Las Vegas to Long Island, New York. But he says the Il Mulino<\/strong> location in Miami at Acqualina Resort and Residences<\/a> on the Beach is his favorite. \u201cI love it because sometimes I can cook outside on the grill and guests can have dinner and watch the beautiful sea,\u201d says Chef Mazza. \u201cYou can\u2019t beat this view.\u201d<\/p>\n

Chef Mazza says the most popular dishes in Miami are centered around the region\u2019s fresh seafood. Ingredients like Branzino and Dover Sole are fresh and high quality, so Chef Mazza enjoys preparing the fish simply with lemon, herbs, and just a bit of seasoning to let the seafood really shine.<\/p>\n

Chef Mazza also enjoys highlighting local produce for dishes like the Caprese, where juicy Florida tomatoes are paired with rich Buffalo mozzarella cheese and basil.<\/p>\n
