The acclaimed restaurant\u2019s new <a href=\"https:\/\/d21winb9rhyn20.cloudfront.net\/acqualinaresort.com-3068162502\/cms\/pressroom\/2025_mediterranean_summer.pdf\">Mediterranean Summer Menu<\/a>, crafted by Executive Chef Michele Mazza, is a tribute to coastal flavors, fresh ingredients, and the art of refined simplicity.<\/span><\/p>\n<p class=\"p2\"><span class=\"s3\">Available for a limited time, the $58 prix-fixe menu offers a seasonal journey through the vibrant flavors of the Mediterranean. Dishes draw on Chef Mazza\u2019s roots on Italy\u2019s Amalfi Coast, while also incorporating Greek-inspired touches that honor the broader region.<\/span><\/p>\n<p class=\"p2\"><span class=\"s3\">\u201cIt\u2019s summertime\u2014people want food that\u2019s light, fresh, and full of flavor,\u201d says Chef Mazza. \u201cThis menu was designed to reflect that feeling.\u201d<\/span><\/p>\n<p class=\"p2\"><strong><span class=\"s2\">A Seasonal Celebration<\/span><\/strong><\/p>\n<p class=\"p2\"><span class=\"s3\">The menu opens with dishes like Zuppa di Melone, a chilled Crenshaw melon soup accented with mint, yogurt, and crispy prosciutto. Bright and refreshing, it\u2019s a bold departure from traditional starters\u2014and a celebration of ripe, seasonal fruit. Another standout is the Greek Grilled Octopus, served with Campari tomatoes and black olives\u2014a nod to classic Greek seaside fare with Il Mulino\u2019s signature Italian finesse.<\/span><\/p>\n<p class=\"p2\"><span class=\"s3\">Pasta courses shine as always, including the elegant Spaghetti alla Nerano, a silky zucchini-forward dish finished with aged Parmigiano, and Tagliolini al Limone, tossed with lemon zest, basil, rock shrimp, and more of that rich 24-month aged cheese. For Mazza, this lemon-laced pasta is the star of the summer menu.<\/span><\/p>\n<p class=\"p2\"><span class=\"s3\">\u201cIt reminds me of home,\u201d he says. \u201cWe use real lemons from Sorrento, and the flavor is just so vibrant and clean. To me, it tastes like the Amalfi Coast in July.\u201d<\/span><\/p>\n<p class=\"p2\"><strong><span class=\"s2\">Unexpected Pairings<\/span><\/strong><\/p>\n<p class=\"p2\"><span class=\"s3\">For the main course, Risotto alle Fragole surprises and delights. Prepared with farm-fresh strawberries and finished in a Prosecco sauce, it\u2019s an elegant twist on a classic that captures the sweetness of the season without being cloying.<\/span><\/p>\n<p class=\"p2\"><span class=\"s3\">\u201cSome guests might hesitate when they see strawberries in a risotto,\u201d Mazza admits with a smile. \u201cBut once they try it, they\u2019re usually amazed. That farm-fresh quality is essential to this kind of cooking.\u201d<\/span><\/p>\n<p class=\"p2\"><span class=\"s3\">One of the menu\u2019s secret weapons is the exclusive use of lemons imported directly from Sorrento, Italy. \u201cThey have a unique aroma and acidity,\u201d he explains. \u201cWhen I use them, I know I\u2019m bringing a piece of my home to the plate.\u201d<\/span><\/p>\n<p>&nbsp;<\/p>\n<p class=\"p2\"><strong><span class=\"s2\">A Multi-Sensory Escape<\/span><\/strong><\/p>\n<p class=\"p2\"><span class=\"s3\">Desserts like creamy rice pudding or delicate apple strudel round out the experience, offering a sweet and satisfying finish.
