A Costa Grill Favorite – Fish Tacos

Are you missing the Fish Tacos from Costa Grill? Now you can make it at home. Join Chef Cesar Roque as he shares a delicious, easy and healthy recipe for Fish Tacos with blackened seasoning, spicy aioli and mango salsa.  Bon Appétit!

Ingredients for Tacos:

  • 1 mahi-mahi fillet cut in chunks
  • 2 6’’ flour tortillas
  • 2 oz. Spicy aioli
  • ½ avocado (sliced)
  • 1 cup rainbow coleslaw blend
  • 1 corn tortilla cut Julienne style and fried
  • 1 teaspoon blackened seasoning

Ingredients for Mango Salsa:

  • 1 mango diced
  • ¼ small red onion peeled and chopped
  • ¼ cup fresh cilantro, chopped
  • 1 lemon, juiced
  • 3 Roma tomatoes, chopped

Directions:

Mango Salsa

  1. Mix all ingredients together in a bowl, let it sit for 10 minutes before serving.

Tacos

  1. Set a skillet to medium heat, rub the fish with olive oil and season it with blackened seasoning.
  2. Place the flour tortillas on a flat surface, and spread each with 1 tablespoon with chipotle aioli and the sliced avocado.
  3. Divide the fish between the tortillas and top with the coleslaw and corn tortilla. Garnish with cilantro and mango salsa on the side.

How to balance your work from home lifestyle

For most of us, working from home has become something we all have had to adapt quickly to, but have you found the balance between working from home and your personal life? We know it hasn’t been easy, our day can easily become out of our control, especially when you may be home-schooling, working, cooking all the meals and simply doing it all.

Our team has also had to adapt, and we want to share simple actions that you can take in order to instill balance in your work from home routine and ensure you are making time for your own well-being.

We recommend that you wake up at least 30 minutes earlier than everyone else in your family, allow this to be your own quiet time. Sip your coffee or tea, meditate, read a book, and do your skincare regimen. Having this moment for yourself will allow you to prioritize and take care of your own well-being so you can tackle on the rest of the day.

And as the day becomes busy and work begins to take over your day, make sure to plan to take a walk to the kitchen at least every 1.5 hours. Fill up your water bottle, step outside for a quick fresh air and re-charge yourself to return to work. It may seem so simple, but just by taking more frequent water breaks you are increasing your daily movement.

As lunch time approaches, make sure to take your lunch break away from your office desk and allow yourself that time to relax. If you have an outdoor area and the weather permits, spend some time outside as well or even go for a short walk.

Now as you return to work, the afternoon most likely flies by. Soon it’s 6pm and that is your time to save your work, shut down your computer and begin your evening routine. An evening routine may be new to you, but it’s a way for you to help lower your cortisol (stress hormone) and allow your mind and body to transition from work to personal life. This is a great time to do a workout, watch your favorite television show, make dinner with your loved ones and spend time with your family.

As 9pm comes around, start dimming the lights in your surroundings. Light can trigger a delay in your melatonin (sleep hormone) release and as you dim the lights, your body becomes aware that your sleep time is approaching.
