Ingredients:

    • 1 Large Zucchini
    • 1 Large Squash
    • 1 Cup of Diced Tomatoes
    • 1/2 Cup of Sundried Tomatoes
    • 2 Tablespoons of Capers
    • 1 Tablespoon Pitted Kalamata Olives
    • 1 Tablespoon of Garlic
    • 1 Fresh Lemon
    • 3 Basil Leaves
    • 1 Cup Shredded Carrots
    • 2 Tablespoons of Olive Oil
    • 2 Tablespoons of Basil Oil

Ahi Tuna Poke Bowl

Ingredients

  • 8 oz Tuna Sushi Grade
  • 2 Heads of Romaine Lettuce
  • 1 Head of Cauliflower (Make Cauliflower Rice with a Grater)
  • 1 Cup Shredded Green Cabbage
  • 1 Avocado Sliced
  • 1 Medium Red Onion – sliced thin
  • 1 Cucumber – sliced, remove seeds
  • 4 oz Hoisin Sauce
  • 1 Tablespoon of EVOO
  • Salt and Pepper to taste

Directions

Step 1: In a small bowl combine the diced tuna, sesame seeds, hoisin sauce and olive oil. Gently toss and season with salt and pepper to taste.
Step 2: In a large serving bowl, layer with chopped romaine lettuce, then on top arrange cauliflower rice, sliced avocado, sliced red onions, cucumbers and cabbage.
Step 3: Add tuna mixture to the bowl and sprinkle with black and white sesame seeds. Served with extra hoisin sauce or soy sauce on the side, if desired.
