An Exceptional Evening with Celebrity Chef Dewey LoSasso and Joseph Phelps Vineyards

Sunny Isles Beach, FL – (February 10, 2014) – On Sunday, Feb. 23, Acqualina Resort & Spa and Joseph Phelps Vineyards will host an exclusive "Evening Under the Stars". Known for its exceptional wines, the Napa Valley-based vineyard is considered the creator of one of the world’s great wines with their 2002 vintage of Insignia receiving the award for “Wine of the Year” by Wine Spectator magazine.

The evening, which coincides with the closing of the Food Network South Beach Wine and Food Festival, begins with a welcome reception, followed by a four-course dinner. Each course will be perfectly paired with an estate-grown wine from Joseph Phelps Vineyards. Both Chef LoSasso and Joseph Phelps Vineyards National Sales Manager KK Dirickson will be on hand to explain each course and its accompanying wine.

Guests will be welcomed with aperitifs including Tuna Crudo with Yuzu, Tilefish Hamachi, Lamb Tenderloin Slice with a Lentil Crust and a Wild Boar "Shot" with Basil Foam and Crispy Herbs paired with Joseph Phelps Vineyards Sauvignon Blanc 2012 Napa Valley. The first course will be Local Mushroom and Florida Lobster Ravioli with Grated Horseradish, Grilled Arugula and an Heirloom Tomato Broth and will be paired with Joseph Phelps Vineyards 'Freestone Vineyard's' Chardonnay 2010 Sonoma Coast. A second course of Crispy Mutton Snapper “Salad” with Truffle Honey Vinaigrette, Crunchy Cardamom Carrots and Pinot Macerated Dates will be paired with Joseph Phelps Vineyards ‘Freestone Vineyards’ Pinot Noir 2011 Sonoma Coast. The third course of Olive Wood Grilled Wagyu Beef Tenderloin with Serrano Chili, Fig Ash, Porcini and Roasted Corn “Budino” and Braised Escarole will be paired with Joseph Phelps Vineyards Insignia 2010 Napa Valley. The dessert course of Coconut and Hazelnut Waffles, Buffalo Ricotta Cannoli and Salted Caramel Semifreddo will be paired with Joseph Phelps Vineyards Eisrebe 2012 Napa Valley.

There will also be a special presentation from Steve Gasman of Coravin, a unique device that allows wine to be poured from a bottle without removing the cork. Coravin prevents oxidation and allows wine to be poured from the same bottle on multiple occasions.
